Prepare the product and cooking area before handling food.

  • Place it on a stable, non-combustible surface
  • Confirm cooking accessories are securely installed

  • Keep a suitable extinguisher, sand or water nearby for emergencies

Choosing your fuel

For stable temperatures, less smoke, better flavour and cleaner combustion, use dry seasoned hardwood, kiln-dried hardwood or high-quality natural charcoal where compatible.

Avoid damp or freshly cut wood because it produces excessive smoke and inconsistent heat.

Lighting the fire

Do not begin cooking immediately. Let the fire form a stable bed of glowing embers for more even heat and less smoke.

  • Place kindling in the centre of the fire bowl
  • Add small pieces of dry wood
  • Light with approved firelighters
  • Add larger logs gradually as the fire establishes

Managing cooking temperatures

Use high heat for steaks, burgers, sausages and quick-seared vegetables. Medium heat suits chicken, fish, kebabs, pork and larger vegetables. Low heat is useful for slow roasting, bread, pot cooking and keeping food warm.

  • Spread embers evenly
  • Add wood gradually rather than all at once

  • Do not return cooked food to an unwashed plate or utensil that held raw meat

Fat dripping onto flames may cause flare-ups. Never extinguish a grease flare-up with water.

  • Trim excess fat where practical
  • Do not place heavily marinated food over intense flames
  • Move food temporarily away from a flare-up

A consistent fire produces more even cooking results. Never use flammable liquids to increase the fire.

For excessive smoke, use dry hardwood, reduce the fuel load and improve airflow. For uneven cooking, spread embers evenly, allow flames to settle and reposition accessories. If food burns too quickly, wait for glowing embers, move or raise the cooking surface where possible, and reduce fuel.

  • Excessive smoke: wet wood, poor airflow or too much fuel
  • Uneven cooking: uneven embers, an oversized fire or misplaced accessories
  • Food burning quickly: excessive direct flame or cooking too close to the fire
